School Lunch Hack: Peanut Butter Sandwich Sushi Rolls


Out of my three daughters, my middle daughter Vivi is by far my pickiest eater. Making her lunch has always been a challenge but this year I’ve mastered a sandwich hack that she loves and will eat basically every day. The best part is it only takes like 3 minutes or less to make and only 2 ingredients.

We discovered this “PB Sandwich Sushi” purely by accident when looking for some kid-friendly “sushi” options for my girls’ I Heart Japan party. Basically it is the ingredients of a regular PB sandwich, just presented in a cleaner, more compact way. It even includes cutting off the crusts which is already one of her requirements with a regular sandwich. As I mentioned, you only need 2 ingredients and 2 tools. For the ingredients: 1-2 slices of bread (white bread works awesome) and peanut butter (I use smooth reduced fat Jif). For the tools: a butter knife and a rolling pin. This recipe also works with Jelly but you need to keep the jelly in the middle so it doesn’t leak out the sides.

So here is what you do…

1) Roll the bread as flat as you can. Make sure it is nice and flat.

2) Cut off those crusts!

3) Smooth on the peanut butter to the edges. About 2 Tablespoons worth.

4) Roll up the bread and cut into 3 pieces.


Add some healthy (or not) sides and a drink and you’ve got the perfect picky kid lunch!
