Monkey Bread Muffins

One of my kids’ favorite things to make when we lived in the States was Monkey Bread Muffins. It’s one of the few things that every single person in my family will eat. And it’s one of those things that you can throw together when you decide that you NEED dessert. The main ingredient is store-bought biscuits, so it really couldn’t be easier to make.

I gave this recipe to Kristen last week and she said it was a SUCCESS in her house! Everyone loved them and they were gone in 10 minutes. Yep, sounds familiar! Mmm just looking at her pictures made me crave them.

Monkey bread muffins

To make monkey bread muffins, start with a can of refrigerated biscuits. I like using just the 8 count generic or original Pillsbury biscuits. If you can only find the Grands biscuits, don’t get the buttery ones.

To start, spray or butter a 6 count jumbo muffin tin. Use scissors to cut the biscuits into bite-sized pieces. They don’t need to be perfect, just similar in size. Roll them in cinnamon sugar and divvy them up between the 6 muffin tins. They should each be about 2/3 full.

Boil the butter, brown sugar and cinnamon and then pour over the biscuits.

Place a baking sheet under the muffin tin in case there is any spillage from the topping. Bake for 12-15 minutes. The tops should be completely baked and a little crispy. Let them cool for at least 10 minutes. Then remove from the tins and enjoy!

Ingredients

  • 1 Can Refrigerated Biscuits, 8 count

  • Unsalted Butter 113g
    (1/2 cup)

  • Light Brown Sugar 1 cup

  • Cinnamon 3 tsp

  • Cinnamon Sugar Mix

Directions

  • Preheat oven to 350°F. Spray or butter a 6 count jumbo muffin tin.
  • Using scissors, cut the biscuits up into bite-sized pieces.
  • Roll them in cinnamon sugar and divide evenly amongst the 6 tins.
  • In a small saucepan, combine the butter, brown sugar and cinnamon and bring to a boil. Pour evenly over the muffins.monkey bread muffins
  • Place a baking sheet under the muffin tin and bake for 12-15 minutes. The pieces on top should be completely baked and a little crunchy.
  • Cool for at least 10 minutes before removing from the tins.
