Apple Pie Spring Rolls

My family LOVES apple pie, and when apples are in season and I can get a bag for super cheap, I start making all the apple desserts! These Apple Pie Spring Rolls can be made any time of year. I only used 2 apples and I got 8 spring rolls. Plenty for a family of 4!

The taste is very similar to our apple strudel. But the spring roll wrappers make them an individual dessert so there’s no cutting needed. Which I prefer because then I get more of the flaky pastry in my mouth. 😍

How to make apple pie spring rolls

Peel two Granny Smith apples and cut into 1/2″ cubes. Place in a small pot with butter, sugar and cinnamon. Cook for a few minutes just until the apples are soft. Turn off the heat and set aside to cool.

Thaw out your spring roll wrappers. Gently peel one wrapper off and set it on a cutting board or lightly floured surface in a diamond shape. Spoon about 2 tablespoons of apples into the center of the wrapper so that it’s in a horizontal line, but leave at least one inch of wrapper on either side.

Pull the bottom of the wrapper up over the filling and lay it there. Next, pull each side of the wrapper toward the other side, but make sure you aren’t shifting the filling while you’re pulling. Finally, keeping all of those three sides taught, roll toward the top until you have just a small triangle. Dip your finger in cold water and sprinkle it on the triangle. Pull that up and over the top, pressing lightly with your fingers to “close” the wrapper.

In a frying pan, pour half an inch of vegetable oil and heat on medium-high heat. Carefully place a few of the spring rolls in the pan and fry for about 2 minutes on each side until golden brown. Place on a paper towel.

Plate the apple pie spring rolls and dust with powdered sugar or serve with whipped cream or vanilla ice cream.

Notes

  • You can easily double or triple this recipe. However, due to the amount of juice that you’ll get, add 1 Tbsp cornstarch if you double the recipe, or 1 1/2 Tbsp if you triple.
