Lately we’ve been doing breakfast for dinner one night a week. Pancakes are usually the main dish, which means my Saturday morning pancakes have been sidelined. Cause, you know, I can’t have the same meal twice in a week. Now, I do have an endless recipe box of breakfast meals, but that doesn’t stop me from creating new recipes. This week it was these Apple Cinnamon Muffins. My daughters are my taste testers and they loved these! So I think they’ll be on regular rotation. ☺
These muffins are light and fluffy, sweet and crumbly, and absolutely delicious! I used the same sweet cinnamon bits that I use in my cinnamon scones. They provide little pockets of cinnamon without the artificial flavor that you get from cinnamon chips. For the apple, finely dice or grate a small green apple. They are perfect right out of the oven, but I buttered the tops of the muffins and then dipped in cinnamon sugar for an extra sweet crunch!
